A delicious winter-inspired shrub infusion that can be enjoyed with soda or in a fancy new cocktail. This infusion combines blood orange and fresh jamaican ginger.

Wash ginger thoroughly and roughly chop into small pieces
In a sterile mason jar, add the rest of the ingredients and let this infuse in a dark, cool area over night.
After 12 hours, give the mason jar a shake so the sugar fully dissolves and let this sit for another 6 hours before straining out the contents.
Can be kept in the fridge, sealed, for 1 month.
