Pina Colada Granita

When you need that quick, refreshing dessert fix, this is a great solution to have. Mixing Fresh Pineapple, Coconut Water and Rum!

Ingredients

  • 6 cups Fresh Pineapple Chunks
  • 1/3 cup White Sugar
  • 1/3 cup Havana Club 3 yr old Rum
  • 1 cup Coconut Water
  • ½ tsp Lemon Juice
  • 1 tiny pinch of Salt

Instructions

  1. Blend all the ingredients above until pureed and smooth.

  2. Pour into a wide dish so the liquid is spread out and freezes quicker. Do not cover. Toss into the freezer over night.

  3. With a fork, gently break apart the granita until the desired texture and size. Toss back into the freezer (uncovered) until ready to eat. Give it at least another 30 minutes to refreeze before serving.

Recipe Notes

I made a very basic version here, but you can easily throw in a handful of herb or split the Pineapple with another fruit. The possibilities are endless. Just be mindful that you need the sugar to help crystallize the solution.

Additional Steps: I didn't do the recipe as I intended to, because I simply forgot that I had left it in the freezer. What I do recommend is every 45 minutes, start to break apart the granita. Do so by following this video here: https://www.allrecipes.com/video/3451/fresh-strawberry-granita/
