Peach Infused Cognac

A rich and delicious peach infusion using dried peaches and cognac!

Ingredients

  • 500 mL Cognac Hine recommended
  • 8 whole dried Peaches

Instructions

  1. Coarsely chop dried peaches and place into a sterile glass container

  2. Pour Cognac into container, stir and cover

  3. Let this stand at room temperature for 24 hours, away from light

  4. Strain peaches out of bath, and keep this stored in a dark, cool area for at least 6 months

Recipe Notes

I will admit, I do prefer using armagnac over cognac, but I wanted to stay true to the classic recipe of a Sidecar. If you want to create something unique, bring out armagnac as the base to compare!
