THE COLONY PALM BEACH – Non Alc Guava Pina Colada
We’re starting this off with a delicious Alcohol-Free serve that honours The Colony Palm Beach in Florida. Now this location screamed Melissa. I know she loves the tropical heat, the fabulous fashion and vibe that is The Colony, and all the pink. That’s why I put these two together to come up with this Alcohol-Free cocktail. The star of this drink is a new favourite of mine, and that’s the Caleño Dark n Spicy. Please note, this was not an easy decision to make, because the Caleño Light n Zesty is just as vibrant and great to showcase in a cocktail. But Dark n Spicy won this round, and it’s easy to grab all the rest of the ingredients!
Pink AF
Serving up an incredible Alcohol-Free Guava Pina Colada using Caleño's Dark n Spicy.
– Difficulty: Intermediate
Ingredients
- 2.5 oz Caleño Dark and Spicy
- 1 oz Guava Juice
- 0.5 oz Pineapple Juice
- 0.5 oz Lime Juice
- 0.5 oz Simple Syrup
- 1 oz Coconut Milk
Instructions
- In a shaker filled with ice, and in all your ingredients and give this a good shake (shaker should be too cold to hold).
- In your glass filled with ice, strain over top and garnish with optional Pineapple Wheel.
THE SURFRIDER in MALIBU – Low in Alcohol Tequila Celery Cocktail
The Cali life to me is all about balance, which is why I wanted to introduce a lower-in-alcohol serve in the mix. It’s a delicious combination of Alida Tequila Blanco, Celery Juice, Apple Simple Syrup and Lime. It’s fresh, bright and everything you need to tackle your day with a breeze. How do we make something lower-in-alcohol with Tequila? Well, it’s all about the ratio in the cocktail which I use half of what I typically use for a cocktail. But it’s important to have a quality Tequila in the mix here, which is why I was excited to have Alida Tequila featured here. A quality tequila crafted by a master distiller renowned by his work with Patron, Loz Azulejos and Casa Maestri.

Surf n’ Celery
A delicious lower in alcohol Tequila Cocktail that combines Celery, Apple and Lime for the ultimate Summer Sipper.
– Difficulty: Intermediate
Ingredients
- 0.5 oz Alida Tequila Blanco
- 2 oz Celery Juice
- 0.5 oz Lime Juice
- 0.5 oz Apple Peel Simple Syrup
- 0.5 oz Tonic Water
Instructions
- In a shaker, add all your ingredients (except Tonic Water and shake well). Strain over ice in a highball glass and top with Tonic Water.
Recipe Notes
The Apple Syrup is a combination of granulated Sugar, apple peels and pit (using the scraps for a more sustainable option). But you can use Apple Juice instead (just sub it for the water) and throw in the cinnamon stick. For the recipe used in this segment, I did the following:
Peel of 1 Apple (Honeycrisp, Royal Gala or Pink Lady works great here)
1 Centre Pit of Apple
1 Cinnamon Stick
1 Cup Granulated Sugar
1 Cup Water
In a small saucepan, add in all your ingredients, bring it to a boil and simmer for 5 minutes before straining. Let it cool to room temp before storing in fridge. Can last up to 2 weeks in fridge.
FOGO ISLAND INN – All-Canadian Manhattan Cocktail
We’re bringing together an extra special All-Canadian Manhattan style Cocktail that uses some of my absolute favourite products! Including Bearface Whisky from British Columbia, Dillon’s Sweet Vermouth from Ontario and Newfoundland’s Screech Rum. Rum plays an important role to the east coast, which is why I wanted to introduce Screech Rum into this Manhattan. Stirred to perfection and one that I know Jess Allen will love!
Fogo City
It's an ode to the Fogo Island Inn with this All-Canadian Manhattan style cocktail
– Difficulty: Intermediate
Ingredients
- 2 oz Bearface Whisky
- 0.5 oz Screech Rum
- 0.5 oz Dillon’s Sweet Vermouth
- 2 dashes Bitters
- Orange Peel or Cherries for Garnish
Instructions
- In a mixing glass, combine all your ingredients (except garnish) with ice and stir well.
- Strain into coupe and garnish with optional Orange Peel or Cherries.
HOTEL DU CAP-EDEN-ROC – Peachy Sidecar
When I think of France, Cognac comes to mind and the iconic Sidecar cocktail. So this legendary cocktail gets paired up with this fabulous hotel that I know our host Andrea Bain will love. Combining Peach Nectar since peaches are in season in France, I bring this Summery Peach Cocktail to life that I know you’ll all love.
Le Peach Grande Dame
The Sidecar gets a summer refresh with Peaches, Hennessy and Grand Marnier!
– Difficulty: Intermediate
Ingredients
- 2 oz Hennessy
- 0.75 oz Peach Nectar
- 0.25 oz Lemon Juice
- 0.75 oz Grand Marnier
Instructions
- In a shaker, add in all your ingredients with ice and give this a good shake.
- Strain into coupe glass.
